Steak at Billy Ray's Restaurant (Roswell, NM)

You would not at all expect a top chef at a hole in the wall bar in Roswell, NM but yes, there was one, one who cooked me the best steak of my life. I kid you not, chef Billy Ray has mastered his steak.

Pictured is his signature dish, a sirloin with southwestern flair. It was swimming in a pool of 3 types of sauces, Verde, red, and cheese.  The steak was ordered medium-rare, and it came out a beautiful, most colorful medium-rare possible. 

The sear was prefect creating juices and flavor UN-imaginable. Seasoned with garlic, salt, pepper, cooked to perfection. This is the place for a damn good steak. They do other cuts of meat as well, just as tasty.
